Michael Israel is the Chef and Owner of the M.O. Eggrolls food truck in Los Angeles, California where he lives with his wife Emily. In 2005, Michael graduated from the Culinary Institute of America with a degree in Culinary Arts. With more than 10 years of professional cooking experience, the highlights of his career include working at Thomas Keller’s 3 Michelin Star restaurant Per Se in New York City and opening a kosher food truck with his wife. With my new blog “Kosher Bacon” I will be sharing my original recipes inspired by Gil Mark’s Encyclopedia of Jewish Food. (Thank you for an amazing and inspiring resource.) The mission of my blog is to motivate people to cook “jewishly” and celebrate Judaism. You don’t have to choose between a good meal and a kosher one! Reviewing the more than 300 recipes in Gil Marks’ inspiring tomb, Encyclopedia of Jewish Food, a few critical facts about Jews become clear. We have been kicked out of almost every continent on the planet at one time or another. We embrace the culture of our current home country. We cook and eat a lot and often. In my opinion, the best way to show the Jew haters of past and present that we are still alive and stronger than ever, is to bring new life to the delicious recipes created by our ancestors. My goal is to cook every recipe in Gil Marks’ brilliant book, with a new approach and an undying respect for everyone who has contributed to Jewish cuisine.
